- 1 cup flour
- 1 cup sugar
- 1/2 tsp baking powder
- 1 tsp cinnamon
- pinch o’ salt
- 1/2 cup oil
- 2 eggs
- 2 cups grated carrots
- However many raisins, if you’re so inclined
- Blend all ingredients and mix well.
- Pour into greased and floured 9″ baking pan.
- Bake for 25-30 minutes at 350°F, or until a toothpick comes clean.
