Fruit Crumble


For the topping:

  • 1 cup quick-cooking or old-fashioned oats
  • 1/4 cup packed brown sugar
  • 1/3 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter, melted

For the fruit filling:

  • 1/4 cup sugar
  • 3 tablespoons cornstarch
  • 2 cups sliced rhubarb
  • 3 cups sliced strawberries


  1. Preheat oven to 350°.
  2. Combine sugar and cornstarch in a large bowl. Add fruit and toss to coat. Spoon into an 9″ pie dish.
  3. Combine the dru ingredient in a small bowl. Melt the butter, add to the dry ingredients and mix together until mixture resembles coarse crumbs. Spread evenly over fruit. Bake until fruit is bubbly and tender, about 45 minutes.


Yield: 8 servings. Based on this recipe – I cut the sugar quite a bit in both the fruit filling and the crumble top.
