Tortilla de Patatas

Tortilla de patatas is a classic Spanish dish that does not require many ingredients and is very filling. It’s an excellent dish to bring to a potluck or on a cold wintry night that demands cozy foods.

Ingredients

  • 2 average-size potatoes
  • 1 regular onion
  • 1/3 cup of olive oil
  • 6 large eggs
  • 1/2 tsp of salt
  • 1/2 tsp of pepper
  • 1/2 tsp of pimentón
  • Optional: half of a bell pepper, sliced into thin rings

Preparation

  1. Peel potatoes and onion and slice thinly, Set aside.
  2. Heat the olive oil in a 12″ or larger skillet over medium heat. Fry the potatoes for about 7 minutes. Add the onions and fry both (as well as bell peppers if you want them) until done.
  3. Remove the sliced onions and potatoes from the skillet and set aside to drain on paper towels or in a colander.
  4. Beat the eggs in a bowl. Mix in potatoes and onions and season with salt, pepper, and pimentón.
  5. Drain excess oil from skillet and set aside. Scrape any crispy bits out of the pan. Add the oil back into the pan and reheat over medium heat.
  6. When the pan is hot, pour in the egg and potato mixture. Cook until bottom starts to brown.
  7. Flipping the the tortilla is the trickiest part of the recipe. Gently run a spatula around the edges and under the tortilla. Place a plate on top of the tortilla. Place your hand on top of the plate and flip the pan and plate together. Place the pan back on the burner and gently slide the tortilla off the plate and into the pan with the spatula. Cook the other side until done (about 5 minutes).
  8. Remove from the skillet and let cool for about 5-10 minutes. Cut into wedges and serve.
