Fried-ish Rice
A quick easy dinner for a night when you’re tired and the fridge is full of leftover rice and other random stuff. Add meat, remove meat, swap out the veggies out for other veggies – you can very easily adapt this recipe to whatever happens to be in your fridge.
Ingredients
- 2 cups of short or medium grain rice, cooked
- Half a large carrot, peeled
- 2 green onions
- 4-5 brown mushrooms, stems removed
- Optional: 1/2 cup of ham
- A cup of shredded greens like spinach or kale
- 2 tbsp of neutral oil
- 1 tbsp of toasted sesame oil
- 2 tbsp of soy sauce
- Salt & pepper, to taste
Preparation
- Peel and mince carrot and mushrooms. Slice the green onions crosswise thinly. Chop ham into small dice.
- In a large frying or saute pan, add the oils, minced vegetables and meat, if desired, and cook over low-medium heat until carrots are soft (about 4-5 minutes).
- Add the rice and soy sauce and mix into the veggies. Season to taste with salt and pepper.
- Remove from heat and serve warm, topped with kimchi, hot sauce, pickled vegetables, fried eggs, toasted seaweed, sesame seeds…
