Fruit Explosion

One thing that Southern Michigan really has in abundance is berries. For a lot of the year, fresh strawberries, raspberries, blueberries and blackberries are all around us. We love to eat them fresh, in jam and in this recipe as a compote that the little dragons love to spoon over pancakes and ice cream.

Ingredients

  • 1-2 cups of berries: raspberries, strawberries, blackberries, or blueberries
  • Sugar to taste
  • Water

Preparation

  1. Toss a cup or two of berries into a pot. If they’re out of season or not fully ripe, add 1 tsp of sugar per cup of berries and mix to coat.
  2. Add a couple tbsp of water and heat over medium-low heat until bubbling. Reduce heat to low and let them bubble away for 10-15 minutes or until the berries burst and get soft.
  3. Serve warm. Will keep in the fridge for a couple of weeks.

Notes

Fruit Explosion is a WAAAAYYYY more fun name than berry compote. No kid wants to put berry compote on their pancakes but Fruit Explosion? OH YES.
