On Saturday mornings, I make oat bran pancakes and serve them with the usual maple syrup and butter and also a berry compote. It’s super easy to make and tastes great added to all kinds of things – yogurt, oatmeal, over ice cream, granola, French toast…
Toss a cup or two of berries into a pot. If they’re out of season or not terribly sweet, add 1 tsp or sugar per cup of berries. Add a couple tbsps of water and heat over medium-low heat until bubbling. Reduce heat to low and let them bubble away for 10-15 minutes or until the berries burst and get soft. Serve warm. Keeps in the fridge for a couple of weeks.
