Tortilla de Patatas is easily customizable. You can cut the amount of onions and your favorite veggies. Tortilla pairs really well with asparagus, bell peppers, and shredded greens. You can also add in a bit of ham, bacon or sausage. It can be topped with parsley or your favorite crunchy things (fried onions, anyone?) and served with a variety of sides – salsa, ketchup (for the discriminating younger palate), hot sauce, sour cream…
