Notes from the Kitchen:

Use water or veggie broth (and perhaps add a little more salt) instead of chicken broth for a vegan soup. You can also substitute pureed white beans for the coconut milk – this will change the flavor some so feel free to adjust seasonings accordingly.

Adapted heavily from this (also very delicious but complimicated and fancy) recipe. We’ve enjoyed it topped with tomatillo salsa, corn relish, all kinds of hot sauces, sour cream, pepitas and more.
